The age of our vines
We always seek to balance freshness, fruit and expression of terroir.
Vinification by parcel, therefore, allows us to analyze the particularities of each parcel, vine and cepage.
Younger vines bring freshness and lightness to the wine. Older vines yield rounder wine, stronger and more concentrated.
We choose the optimal age of our vines according to the particularities of each terroir and grape. For example, on more aromatic parcels that produce very strong wine we do not let the vines become too old. By contrast, we maintain older vines on lighter and more subtle terroir.
This careful balance provides the many blending opportunities that allow our Champagne to flourish.
